Many of you are familiar with the name, Chef Paolo Nota in the Lehigh Valley, but did you know that his career did not start in the Lehigh Valley? His career started in his home country of Italy.
After graduating from the Culinary Institute of Torino in 1979, Paolo worked in the French Riviera as an apprentice and as a sous chef in Torino. In 1984 he was presented with the opportunity to travel to the United States and help open a Northern Italian restaurant in New Jersey called A Ca Mia.
In 1985 he became part owner until he moved back to Italy in 1989 and opened two restaurants along with his brother.
In 1994 he moved back to the states, this time settling in Bethlehem where he worked as a chef at Pane’e Vino.
In 2001 he opened his namesake restaurant, Paolo’s Italian Restaurant in Northampton which he owned until 2010. Following that restaurant, he opened his last restaurant, A Ca Mia in 2012. He owned that until 2017.
Chef Paolo is now part of the Woodstone team at Woodstone County Club and Lodge in Danielsville, PA
